Sous bois is a French term referring to the forest floor or undergrowth. The soft, earthiness the term evokes is what inspired this dish – portobello mushrooms, celery root, Fuji apples, and fresh herbs blend harmoniously when cooked with Christophe’s expert touch.
This exotic, vibrant dish tastes even better than it looks. We take healthy brown rice and cook it with traditional Persian spices, juicy pomegranate seeds, and toasty pistachios. Want more protein? Try adding one of ours, like our juicy grilled chicken.
